Overview

Join a fully hands-on Japanese cooking class at a 56-year-old culinary school just 3 minutes from Kanazawa Station. This is not a demonstration—each participant prepares all dishes with personal guidance from a professional local chef.

Learn practical skills you can use at home, including how to shape sushi, make dashi, cook rolled omelets, and prepare Jibuni, a Kanazawa specialty. You’ll also gain insights into the cultural background of each dish.

We use fresh, seasonal ingredients, including premium fish from Omicho Market—also supplied to Michelin-starred restaurants.

Real-time AI translation via a 65-inch screen ensures smooth communication in English.

Note: Vegan diets and those avoiding fish-based dashi cannot be accommodated. Please inform us of any other dietary needs at booking—same-day changes are not accepted.

Activity itinerary

Join an authentic cooking class at a 56-year-old culinary school just 3 minutes from Kanazawa Station. After changing into a sushi chef uniform, you'll learn about Japanese food culture and ingredients with real-time AI translation support. You'll make five dishes with step-by-step guidance: • Nigiri Sushi – using wild fish from Omicho Market • Jibuni – Kanazawa’s signature chicken stew • Dashi-Maki Tamago – soft rolled omelet with a Michelin-style recipe • Dashi Broth – traditional bonito and kelp stock • Seasonal Side Dish & Miso Soup Use premium Japanese knives and, if you wish, visit our in-house Knife Museum (opening July 2025, 10% discount for participants). Photos will be taken during the class, and you’ll receive a beautiful certificate of completion. Enjoy your handmade dishes with a small aperitif (plum wine or sake). A hands-on, small-group class with local flavor and warm hospitality.
